Homemade Ice Cream...in FIVE minutes!


We were given this fun summer recipe at work last week so Thomas and I gave it a try this past weekend and had great success! This is a yummy, easy and inexpensive treat that would be lots of fun to do with kids.

Recipe for Homemade Ice Cream in a Baggie

Ingredients per serving:
2 Tbsp. sugar
1 cup half and half
1/2 tsp. vanilla
1/2 cup course salt (table salt will do but not as well) - enough to fill 1/2 of a gallon ziploc
1 pint or quart size ziploc
1 gallon size ziploc

Step 1: Combine sugar, half and half and vanilla in the pint size baggie. Seal tight!

Step 2: Place the salt and ice in the gallon size bag then place the pint size bag inside. Seal the large bag well. Shake, shake, shake...shake that baggie! Takes about 5 minutes. You can feel through to the pint bag to see when it's done.

Step 3: Take the small bag out, wipe off salt residue, open and add mix-ins. Eat right from the baggie. No clean up. :)

The gallon bags can be re-used for lots of summer ice cream!

About Time..

Just a FEW things have occurred in the last couple of months so I'll try to keep this somewhat short as I fill you all in...
First things first - Graduation! Yes, back in May Thomas graduated with a BFA in Graphic Design!

To celebrate we headed off to Costa Rica for 10-vaca and adventure. We had a really great time going white-water rafting, zip-lining, hanging at the beach, having a volcano erupt and even experiencing an earthquake! So after returning from Costa Rica, Thomas had the opportunity to meet with his mentor from the past year at BSU about a possible internship. Well, the internship morphed into an offer for a full-time position with the company and of course, Thomas JUMPED at the opportunity to work with such talented individuals and we were both elated that an opportunity came along so quickly after graduation. So now Thomas is a graphic designer for Carew Co. The office is located in downtown Boise - which is literally 8 blocks from our home. This is a HUGE change for Thomas who has never worked an 8-5 job and especially one where he doesn't have to commute! He started working last week and absolutely LOVES it!



Somewhere during this time-frame I was extremely busy at work with the 1st Annual Ultimate Urban Challenge. This biking scavenger hunt fundraiser was a RAVING success! Participants received clues to 9 different locations throughout Boise where they had to complete a challenge. Challenges ranged from: rafting, hip-hop dancing, archery, eating cow tongue, basketball shooting, Rock Band, fireman drills and an obstacle course. Again, the event was a huge success and we felt so invigorated to have pulled off something so great. Can't wait til' next year!

Last weekend we did a little more traveling as we drove down to celebrate the union of our friends in Island Park. It was a beautiful wedding and the weather and area were perfect! Not only did we enjoy the wedding, but we took an afternoon to go 4-wheeling on some of the MANY trails, enjoyed some great fireworks, yummy food and beautiful scenery. We are considering making the trip an annual one since we enjoyed it so much. Without the wedding that is. :)

So needless to say, things have definitely been busy but things are falling into place and we are just loving every minute of it. Hope you're enjoyed this short update! Until next time..

Only a matter of days...

until Thomas' graduation! For those of you ready for me to blog about something OTHER than graduation, the time is almost near. :) Right now though, we are just pretty darn excited. Tomorrow is Thomas' official last day of class and then he's all done and it'll be on to the real world!

I don't recall putting in NEARLY as much effort as my dear Thomas seems to be in order to get himself a job in the design field. I am trying to decide if it's just the economy that will require the extra efforts or the design field....could be both I suppose. Regardless, I am amazed at how proactive Thomas is being and I just know it will pay off for him! (and if someone happens to know of a design job opening - please let us know!)

So without further ado, here is the FINAL countdown surprise...

Thomas just adores chocolate covered strawberries so it seemed fitting to save the best for last!

Thomas was presented with this countdown surprise during out "Breakfast for Dinner" last night. Now that the countdown is done, I'll have to find something else to do with my time...ALTHOUGH, we DO leave next week for Costa Rica!!! :) If we're going to be honest, that is the REAL icing on the cake in celebration of Thomas' hard work. Can't wait to fly away for a week with my Mr. Pura Vida!

So let me explain...this week I wanted to highlight something FUN since
that doesn't usually coincide with work and Thomas has been
SUPER busy! So I wanted to recreate a game of Sonic Smash and
make it look like the balls were being hit. Too bad you can see the thread!

3 Weeks..


We're down to the last three weeks before graduation and what better surprise than Thomas' favorite Girl Scout cookies! This is also a really big week as Thomas and his Sr. classmates show their hard work at their portfolio show tomorrow! I am so excited for everyone to see how talented Thomas is and am certainly very proud of all Thomas has accomplished so far.
